Carrot & Quinoa ‘Falafel’ Burgers on a brioche bun with sweet potato fries. Yeah….burger time!!! πŸ”πŸƒ This was actually super tasty and not filling to the point of a food coma. I don’t know about everyone else, but I am SO glad it has just been the weekend. Why? Because I was able to catch up on plenty of yoga and pilates and socialise with some good friends. Oh, and great food…like this burger πŸ˜„

Ingredients:
2 cups of carrot pulp or grated carrot
1/2 cup black quinoa
1/2 white medium minced onion
1 cup spelt flour plus another 1/4 for safe measure
1/4 cup fresh coriander finely chopped
2 tsp each: cumin, chilli powder, ground coriander
1 tsp salt
2 tbs olive oil
Method:
1) Being quinoa to a boil and leave to simmer on a low heat for 15 – 20 minutes
2) Place all ingredients into a mixing bowl except the flour and mix
3) The amount of flour used will depend on the wetness of the carrots. Use the first cup and use whatever is needed of the other quarter cup to get a feel for the form of the mixture. (It should be moist enough to mould and hold shape but dry enough so they do not fall apart easily)
4) Bake on a very lightly oiled baking tray (and cook through on gas mark 6 for approximately 20 to 25 minutes
5) Serve in a burger bun with sweet potato fries as shown or with a lovely varied salad.
