I am definitely grateful for this beautiful weather, but I cannot for the life of me even fathom a hot plate of food in front of me right now. Salad and more salad please.
Chickpea crust pizza with beetroot hummus and a simple green salad today.
I was never a girly girl growing up and never did the pinks – and I was even scared of beetroot as a child … but I tell you what…I am definitely loving the pink foods right now. Note: I opted to use raw beets for the hummus instead of roasting them, so have a rougher consistency but it still tastes delicious.
Going to a brilliant event for a great cause this evening as I was kindly invited by the lovely Rupy of @doctors_kitchen so very excited to have the pleasure of attending. Enjoy the rest of the day peeps! Xx
