The Bare Scientist #9

Two trial participants booked in back-to-back today, both undergoing a six hour mixed-meal-tolerance test which means plenty of jetting across the clinical research facility from patient bays to the lab! Gonna need all the energy possible so whipped up a quick batch of Date Cashew Oat and Almond energy ball thingies (they go by so many names?!). It’s Monday AND it’s set to be another sunny beautiful day guys!!! ANNNND we even have a full week of good weather to top it off! I’m literally jumping for joy πŸ˜ƒ

Recipe:
2 cups dry raw cashews
2 cups dry raw almond
1/2 cup @quakeroatsuk
6 pitted medjool dates
2 tbs walnut oil
2 tsp almond essence
1 tsp oats for rolling
1/2 tsp each of cinnamon powder and cacao powder for dusting

Method:
Place everything into a blender and blitz until fairly smooth. Scrape all paste away from the sides of the blender cup and tightly roll into evenly formed balls. Roll some of the balls into oats…Coat some of the other balls with chocolate..Sprinkle a selection of the balls with cacao or cinnamon powder. Place in the fridge/freezer for 15-20 minutes to firm up.
